Madeline Cookies

Ingredients
  

  • 1 cup Butter Softened
  • 1 cup Sugar Granulated or powdered
  • 2 Eggs Large, room temperature
  • 2 cups Flour All-purpose or cake flour
  • 2 teaspoons Baking Powder Check expiration date

Instructions
 

  • Cream together the softened butter and sugar until light and fluffy. Use an electric mixer.
  • Add the eggs one at a time, mixing well after each addition.
  • Gently fold in the flour and baking powder. Don't overmix.
  • Grease and flour a Madeline pan.
  • Fill the molds about ⅔ full.
  • Preheat oven to 400°F (200°C).
  • Bake for 10-12 minutes, or until golden-brown edges and a slightly firm center.
  • Let cool in the pan for a few minutes before removing.
  • Gently run a thin knife around the edges to loosen.

Notes

Using room temperature ingredients is important. This helps the butter and sugar mix smoothly. Cold ingredients can lead to a tougher cookie. Don't overmix the batter. Overmixing develops the gluten in the flour, making the cookies tough.
