Christmas Whipped Shortbread Cookies

Ingredients
  

  • 1 cup Butter Cold, salted or unsalted
  • 2 cups Flour All-purpose or cake flour
  • 0.75 cup Sugar Granulated
  • 1 teaspoon Vanilla Extract Or other extract

Instructions
 

  • Combine cold butter and sugar. Beat until light and fluffy using an electric mixer.
  • Add flour and vanilla extract. Mix until combined. Do not overmix.
  • Chill dough for at least 30 minutes (up to 2 hours).
  • Roll out dough to ⅓ inch thickness on a lightly floured surface.
  • Use cookie cutters to cut out shapes. Transfer cookies to baking sheets lined with parchment paper.
  • Bake at 350°F (175°C) for 12-15 minutes, or until edges are golden brown and centers are firm.
  • Cool cookies on baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Store cooled cookies in an airtight container at room temperature for up to a week.
