Ingredients
2 tbsp olive oil
1 lb chicken breast, cut into strips
3 garlic cloves, minced
1 tsp Italian seasoning
1 cup chicken broth
1 cup heavy cream
½ cup Parmesan cheese, grated
8 oz rotini pasta, cooked al dente
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions
Heat olive oil in a large skillet over medium heat. Season the chicken strips with salt, pepper, and Italian seasoning. Cook the chicken for about 5-7 minutes on each side until golden brown and fully cooked through. Remove from the pan and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the pan, and bring to a simmer. Stir in heavy cream and Parmesan cheese, cooking for 2-3 minutes until the sauce thickens.
Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
Return the cooked chicken to the pan, allowing everything to heat through.
Garnish with fresh parsley and serve immediately.
