Ingredients:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar (adjust to taste)
3 large eggs
1 teaspoon vanilla extract
1/2 cup raspberry preserves
Fresh raspberries, for garnish
Whipped cream, for garnish
Lemon zest, for garnish
Directions:
1. Preheat and Prepare Pan:
Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. Make the Crust:
In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan.
3. Prepare the Cheesecake Mixture:
In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Assemble the Cheesecake Bars:
Pour the cream cheese mixture over the crust in the baking pan.
Drop spoonfuls of raspberry preserves over the top of the cream cheese mixture. Use a knife to swirl the preserves into the mixture.
5. Bake:
Bake for 35-40 minutes, or until the center is set. Allow to cool completely in the pan on a wire rack.
6. Chill:
Refrigerate for at least 2 hours before slicing into bars.
7. Garnish and Serve:
Garnish with fresh raspberries, whipped cream, and lemon zest before serving.
